A treat if you're local to Nashville.....

I had a small luncheon today for the science department at my school. I made yummy Chicken Divan, T-Pot rice (named after my friend Margaret's mom because she made it all the time) and had petit fours from a new friend Katie. If you are from Nashville you HAVE to find a reason to order some. Oh.My. Goodness. They could not be any yummier. And at only $15/dozen- I want to order them every week! Check them out! Here are the recipes for the Chicken Divan and rice. The rice is great with just about anything!

Chicken Divan

Cook 2-3 chicken breasts in bite size pieces. Spray a 13x9 pan with Pam. Pour in a bag of frozen broccoli florets. Sprinkle with Parmesan cheese. Place chicken pieces on top of broccoli. In a separate bowl mix 1c cheddar cheese, 2 cans cream of chicken soup, 1 c mayo (obviously Duke's is the best), 1 c sour cream 1 tsp curry powder, salt and pepper to taste and 1T lemon juice (fresh is better). When this is well mixed, spread it on top of the chicken and broccoli. (Sometimes I use "low fat" everything, except the mayo and it's still yummy) Top with more cheese and paprika. Bake at 350 for 30-40 min. Yum! This can be put together the day before, refrigerated and cook when you need it. This is the perfect dish to take somewhere- you know when a baby is born, someone is sick, to me if you come visit :-) etc....

T-Pot rice

In a 13x9 pan add 2 c long grain white rice. Add 1 can french onion soup and 2 cans beef broth or beef consume. Top with butter pieces. Cover with foil and bake at 350 for 1 hour. You will make this a lot!!!!
